Daisy's recipe day


The 7th of every month our friend Daisy posts a recipe on her blog and asks readers to share their favourites.

It's the 7th today so here's mine -

Yoghurt Cake

So easy to make, no scales you use the empty yoghurt carton to measure.

What you need -

An Apron


A mixing bowl
2lb loaf tin
150g of yoghurt (plain natural yoghurt is fine but I use mandarin flavour yoghurt)
Vegetable Oil (enough to fill the yoghurt carton once)
Caster Sugar (enough to fill the yoghurt carton twice)
Self Raising Flour (enough to fill yoghurt carton three times)
Now try not to get too much flour over you

3 eggs
1 teaspoon of vanilla essence

What you do -

Preheat oven to 160/170c or Gas mark 3
Grease and line your cake tin
Empty yoghurt into bowl
Fill carton once with vegetable oil pour in bowl
Fill carton twice with caster sugar tip in bowl
Fill carton three times with S.R. flour and tip in bowl

Beat your eggs and pour in bowl

Add the vanilla essence
If your using mandarin flavour yoghurt add a little zest of an orange
Mix well.

Pour into baking tin and bake on middle shelve for around 2 hours until firm to touch and nice and golden brown.



As this cake is made with oil it does stay nice and fresh in a tin for quite a while

Ronnie - What an easy way to bake, using the yogurt container as a measure.

You and I had the same thought about beating eggs! I love your picture.

I think quite a few of us will be in the kitchen this weekend, whipping up some delicious treats!
